We have compiled a some recipes that feature our BBQ spices, seasonings, marinades and sauces. Some are traditional, some have evolved through trial and error! Tips and Techniques:

To Oil Grates before grilling: Use a pair of tongs and a wadded up paper towel. Dip towel in a small dish of vegetable oil and mop onto hot grates. Toss paper towel when done - easy clean-up!

DO NOT GRILL with Extra Virign Olive Oil: It has too low of a burn temp. Your food will stick and burn much easier than using a canola, soy or other vegetable oil. Save the EVOO for dressings!

Don't have a Smoker or Charcoal Grill? No Problem! Get some smoking chips. A variety of different woods are available at grilling supply stores. Soak a handful of chips in water for about a half an hour prior to starting your grill. Drain chips and wrap them in aluminum foil. Poke some holes in the top of the foil and place on one side of your grill grates. When the packet heats up and burns - it will release a nice, smokey aroma into your foods as they cook. Clean-up is easy too - just throw the packet away once it has cooled!
